Crispy fried chicken tossed in a savory ginger-garlic soy sauce.
Ingredients:
  • 2 cups chopped green onions
  • 0.5 cup cornstarch
  • 0.25 cup water
  • 1.5 teaspoons minced garlic
  • 1.5 teaspoons minced fresh ginger root
  • 0.75 cup white sugar
  • 0.25 cup soy sauce
  • 0.25 cup white wine vinegar
  • 0.5 cup hot chicken broth
  • 1 teaspoon monosodium glutamate (MSG)
  • 3 pounds skinless, boneless chicken breast halves, cut into bite size pieces
  • 0.5 cup soy sauce
  • 1 teaspoon ground white pepper
  • 1 egg
  • 1 cup cornstarch
  • 1 cup vegetable oil
  • 16 chile peppers, sun-dried
Instructions:
  • Prepare the sauce by blending 1/2 cup cornstarch with 1/4 cup water in a large bowl. Stir in garlic, ginger, sugar, 1/4 cup soy sauce, and white wine vinegar. Pour in chicken broth and monosodium glutamate, mix until sugar dissolves. Chill in the fridge until ready to use.
  • Combine the chicken with 1/2 cup soy sauce and white pepper in a bowl. Mix in the egg, then add 1 cup cornstarch and coat the chicken evenly. Use oil to separate the chicken pieces. Deep fry the chicken in small batches at 350 degrees F (175 degrees C) until crispy. Drain on paper towels.
  • Heat a small amount of oil in a hot wok. Quickly stir-fry scallions and dried chile peppers. Stir the sauce from the refrigerator and pour it into the wok. Add fried chicken and cook until sauce thickens to your desired consistency, adjusting with cornstarch or water as needed.
