Master homemade General Tso's chicken: crispy fried chicken in a sweet-spicy sauce.
Ingredients:
  • 4 cups vegetable oil for frying
  • 1.5 pounds skinless, boneless chicken thighs, cut into 1 1/2-inch pieces
  • 1 teaspoon white sugar
  • 1 pinch white pepper
  • 1 cup cornstarch
  • 2 tablespoons vegetable oil
  • 3 tablespoons chopped green onion
  • 1 clove garlic, minced
  • 6 dried whole red chilies
  • 1 strip orange zest
  • 0.5 cup white sugar
  • 0.25 cup soy sauce
  • 3 tablespoons chicken broth
  • 2 tablespoons peanut oil
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 0.25 teaspoon ground ginger
  • 2 teaspoons cornstarch
Instructions:
  • Preheat vegetable oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C) until it shimmers and is ready for frying.
  • In a large mixing bowl, vigorously whisk the egg. Add chicken, salt, sugar, and pepper, then mix thoroughly. Gradually incorporate cornstarch until the chicken is fully coated.
  • In batches, gently add one piece of chicken at a time to the hot oil. Fry until golden brown and starting to float, approximately 3 minutes. Transfer chicken to a plate to cool while you fry the remaining batches.
  • Refry all the chicken batches until they turn a deep golden brown, about 2 minutes longer, starting with the first batch that was cooked. Then, drain them on a paper towel-lined plate.
  • Make flavorful sauce: Heat vegetable oil in a wok or large skillet over high heat. Add green onion, garlic, whole chiles, and orange zest. Sauté until garlic is golden and chiles are vibrant, about 1 to 2 minutes.
  • Combine sugar, soy sauce, chicken broth, peanut oil, rice vinegar, sesame oil, and ginger in a pot. Bring to a boil and cook for 3 minutes. Whisk 2 teaspoons of cornstarch in water until dissolved. Stir into the sauce, return to a boil, and cook until the sauce thickens and clears, about 1 minute.
  • Add the chicken to the bubbling sauce. Lower the heat and simmer until the chicken is warm and has soaked up the flavors, approximately 3 minutes.
