Crispy tofu covered in spicy-sweet-salty sauce - a vegetarian twist on General Tso's chicken.
Ingredients:
  • 1 (14 ounce) package extra-firm tofu, cut into 1/2-inch cubes
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 3 tablespoons soy sauce
  • 3 tablespoons maple syrup
  • 2 tablespoons sambal oelek
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced garlic
  • 2 teaspoons sesame oil
  • 2 teaspoons cornstarch
  • 2 green onions, chopped
  • 5 tablespoons cornstarch
  • 3 tablespoons olive oil
Instructions:
  • Place tofu on a double layer of paper towels on a plate. Top with another double layer of paper towels and another plate to cover. Use a 3- to 5-pound weight to press tofu for 30 minutes. Discard any liquid that drains out.
  • In a shallow bowl, combine tofu cubes with 2 tablespoons of soy sauce and sesame oil. Gently toss to coat and marinate for 10 minutes, or until tofu has soaked up the flavors.
  • Prepare the sauce by combining soy sauce, maple syrup, sambal oelek, rice vinegar, minced garlic, sesame oil, cornstarch, and chopped green onions in a bowl. Set aside.
  • Remove any excess liquid from the tofu. In a large resealable plastic bag, add cornstarch. Place tofu cubes in the bag, seal, and shake gently to coat them with cornstarch.
  • In a large skillet over medium-high heat, sizzle tofu in olive oil for 4 minutes until golden brown all over. Transfer to a plate after flipping with tongs.
  • Thicken the sauce in the skillet for about 2 minutes, then remove from heat. Add tofu back to the skillet and toss to combine.
