Festive German Christmas stollen with raisins, citrus peel, and almonds.
Ingredients:
  • 8 cups all-purpose flour
  • 3 ounces compressed fresh yeast
  • 1 pinch white sugar
  • 1 tablespoon lukewarm milk
  • 1.5 cups milk
  • 1 cup unsalted butter
  • 2 tablespoons unsalted butter
  • 1 cup white sugar
  • 2 egg yolks
  • 1.75 cups chopped blanched almonds
  • 1.25 cups raisins
  • 6 tablespoons candied lemon peel
  • 6 tablespoons chopped candied orange peel
  • 2 tablespoons melted butter
  • 2 tablespoons confectioners' sugar
Instructions:
  • Prepare all your delightful ingredients for a culinary masterpiece.
  • In a large bowl, create a well in the center of the flour, then crumble fresh yeast into it. Sprinkle in sugar and pour in 1 tablespoon of milk. Cover and allow to rise in a warm spot for 15 minutes.
  • In a saucepan, gently warm 1 1/2 cups of milk with 1 cup plus 2 tablespoons of unsalted butter until the butter is fully melted.
  • Combine the milk-butter mixture with the yeast mixture and mix in 1 cup of sugar, egg yolks, and salt. Knead until a soft dough forms. Cover with a clean dish towel and let it rise in a warm place until it doubles in volume, approximately 1 hour.
  • Prepare a baking sheet by lining it with parchment paper.
  • Combine the almonds, raisins, candied lemon peel, and candied orange peel, then gently incorporate them into the dough. Form the dough into a loaf shape on the baking sheet. Cover and allow it to rest for about 30 minutes until the loaf slightly rises again.
  • Preheat your oven to 375°F (190°C).
  • Once the oven has been preheated, bake the stollen for 45 to 60 minutes or until a toothpick inserted in the middle comes out clean. Once baked, take it out of the oven and immediately brush it with 2 tablespoons of melted butter and dust it with confectioners' sugar.
