Gholpi (Afghan Stewed Cauliflower)

Afghan cauliflower stew: Bold, spicy, and comforting. Perfect for Eid celebrations.
Ingredients:
  • 1 large sweet onion, roughly chopped (about 2 cups)
  • 1/4 cup vegetable oil
  • 3 Anaheim peppers, divided
  • 2 tablespoons tomato paste
  • 2 teaspoons curry powder
  • 1 teaspoon advieh
  • 1/2 teaspoon felfel , or 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground turmeric
  • 1 large cauliflower, cut into 2-inch florets
  • 3/4 cup water
  • 1 teaspoon kosher salt, plus more to taste
  • Barbari or lavash, for serving
Instructions:
  • Sauté the onions in a ghablama, wok, or large sauté pan over medium-high heat for about 4 minutes until softened, keeping the lid on to trap steam. Let them brown around the edges if desired. If they begin to char, lower the heat and keep stirring. Add oil and reduce heat to medium, cooking for an additional 2 minutes until onions are tender and translucent.
  • Prepare the peppers and seasonings: Remove the stem and thinly slice 1 Anaheim pepper. Combine the sliced peppers with tomato paste, curry powder, advieh, felfel, black pepper, and turmeric in the pan with the cooked onions. Sauté together for approximately 2 minutes, stirring constantly.
  • Prepare the cauliflower: Combine cauliflower florets, 3/4 cup water, and salt in a pot. Cover and cook for 12-15 minutes, stirring occasionally, until cauliflower is tender. Adjust seasoning if necessary before serving.
  • Char the Anaheim peppers by placing them in a hot frying pan over medium-high heat. Allow them to char without moving them until they start to darken, then turn them every few minutes to char evenly. Be prepared for some peppery smoke by opening your windows.
  • Present the gholpi on a serving platter, ensuring the florets remain intact. Top with charred peppers and serve warm with barbari or lavash. Leftovers can be refrigerated for up to 5 days. Enjoy the recipe? Leave us a rating!
