Gin and tonic jelly with macerated fruits

Ingredients:
  • 130g caster sugar
  • 3 lemons, rind grated, juiced
  • 300ml tonic water
  • 15g gelatine powder
  • 80ml (1/3 cup) gin
  • 110g (1/2 cup) caster sugar
  • 1 orange, zested, segmented
  • 2 limes, zested, segmented
  • 1 pink grapefruit, segmented
Instructions:
  • In a saucepan over low heat, combine sugar, lemon rind, and tonic water. Stir until sugar is dissolved, then simmer for 2-3 minutes. Remove from heat.
  • Soak the gelatine in a bowl of cold water for 5 minutes until softened. Squeeze out excess water, then mix it into the liquid along with the gin. Let the mixture cool before straining it into the molds. Chill in the refrigerator for a minimum of 4 hours until set.
  • Prepare a flavorful syrup by combining sugar, 125ml (1/2 cup) of water, and orange and lime zest in a saucepan over medium-low heat until the sugar dissolves. Increase the heat to high and boil until reduced by half. Remove from heat and let it cool. Once cooled, mix in the fruit segments and refrigerate for 30 minutes to macerate and chill.
  • Briefly dip the base of each mold in warm water, then gently overturn onto serving plates. Enjoy with the macerated fruits.
