Ginger and lemongrass cooler

Vietnamese-inspired cool and invigorating starter for Asian feast.
Ingredients:
  • 2 stalks lemongrass (white part only), sliced
  • 6cm piece fresh ginger, sliced
  • 161.25 gm caster sugar
  • Lemongrass stalks (see note), to serve
  • Ice cubes, to serve
Instructions:
  • In a saucepan, combine lemongrass, ginger, sugar, and 8 cups of cold water. Bring to a boil over high heat, then simmer on low for 15 minutes. Let it cool for 30 minutes before transferring to an airtight container and refrigerating until cold.
  • Pour the fragrant lemongrass mixture through a fine sieve into a large jug, leaving behind any solids. Fill glasses with ice cubes and optional lemongrass stalks. Then, top them up with the refreshing lemongrass mixture and serve.
