Ginger lime marinated chicken stir fried in sesame oil and honey, served with coconut rice - a flavorful and easy dish that will dazzle your taste buds!
Ingredients:
  • 1.5 pounds skinless, boneless chicken breast halves - cut into 1 inch cubes
  • 2 limes, zested and juiced
  • 2 tablespoons grated fresh ginger root
  • 1.75 cups coconut milk
  • 0.5 teaspoon white sugar
  • 1 cup jasmine rice
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 0.25 cup sweetened flaked coconut
Instructions:
  • Combine succulent chicken breast cubes in a glass bowl with zesty lime juice, fragrant lime zest, and freshly grated ginger. Allow the flavors to meld perfectly as it marinates for 20 minutes.
  • In a saucepan, simmer coconut milk and sugar. Add jasmine rice, cook covered on low heat for 20 minutes until liquid is absorbed. Fluff with a fork, cover, and keep warm.
  • Heat sesame oil in a large skillet or wok over medium-high heat. Add chicken with marinade and stir fry until nicely browned, about 3 minutes. Drizzle honey over the chicken and continue to stir-fry for another minute, avoiding burning the honey. Remove from heat and sprinkle with coconut.
  • Serve the dish piping hot alongside the fragrant coconut rice.
