Festive spiced cheesecake bars with ginger, cinnamon, and clove flavors - a must-try treat for Christmas! Ideal for gingerbread lovers.
Ingredients:
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon salt
  • 0.75 cup margarine, softened
  • 1 cup white sugar
  • 0.25 cup molasses
  • 1 tablespoon water
  • 2 (8 ounce) packages cream cheese
  • 0.5 cup powdered sugar
  • 0.5 cup brown sugar
  • 6 tablespoons molasses
  • 2 teaspoons ground cinnamon
  • 3 cups whipped topping
  • 2 tablespoons whipped topping, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • In a bowl, combine flour, ginger, baking soda, cinnamon, cloves, and salt, sifting them together for the cookie base.
  • Using an electric mixer, beat margarine and white sugar in a large bowl until light and fluffy. Add egg and beat well. Mix in molasses and water. Gradually incorporate flour mixture into molasses mixture. Press dough into a 9x13-inch pan to cover the entire bottom evenly.
  • Bake in the oven until golden brown, around 25 to 30 minutes. Let it cool completely before serving.
  • In a large bowl, use an electric mixer to blend cream cheese, powdered sugar, and brown sugar until smooth. Mix in molasses, ginger, cinnamon, nutmeg, and cloves, scraping down the sides of the bowl until well combined. Gently fold in 3 cups of whipped topping until incorporated. Spread the filling over the cooled cookie base, cover, and refrigerate for a minimum of 4 hours or overnight until set.
  • Top with the remaining fluffy whipped topping just before serving.
