Gingerbread cob loaf dip recipe

Get ready for the ultimate Christmas cob loaf dip with ginger nut biscuits, cheesecake, golden syrup, gingerbread men, candy canes, and more festive treats.
Ingredients:
  • 1 cob loaf
  • 167.50 gm golden syrup
  • 20g butter, melted
  • 500g cream cheese, softened
  • 49.50 gm icing sugar mixture
  • 7.50 gm ground ginger
  • 2.50 gm mixed spice
  • 126.25 gm thickened cream
  • 4 ginger nut biscuits, coarsely crushed
  • Gingerbread men, to serve
  • Candy canes, to serve
  • Poco wafers, to serve
  • Strawberries, to serve
  • 90.00 gm brown sugar
  • 13.20 gm vanilla extract
  • 2.50 gm ground cinnamon
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line a large baking tray with baking paper.
  • Prepare the Glaze: In a small saucepan, mix brown sugar, 2 tablespoons of water, vanilla, and cinnamon. Stir over medium-high heat until sugar is fully dissolved. Let it simmer for 3 minutes, then remove from the heat.
  • Trim the top off the cob and scoop bread from the center, leaving a 1cm edge. Cut the bread and top into large pieces and place in a large bowl. Brush the outside of the cob with 2 tablespoons of golden syrup. Brush half of the glaze inside the cob. Drizzle chopped bread with the remaining glaze and butter, toss to coat. Place on a tray around the cob. Bake for 20 minutes until golden. Allow to cool for 15 minutes before serving.
  • Using an electric mixer, blend cream cheese and icing sugar until smooth. Mix in 1/4 cup golden syrup, ginger, and mixed spice until combined. Pour in cream and beat for 2 minutes until mixture thickens slightly.
  • Spread a layer of 1/4 of the biscuit crumbs on the base of the cob. Add a layer of 1/3 of the cheesecake mixture on top. Drizzle with 1 teaspoon of remaining golden syrup. Repeat the layering process two more times, with a final layer of cheesecake on top. Garnish with dollops of whipped cream, drizzle with the remaining golden syrup, and sprinkle with the rest of the biscuit crumbs.
  • Arrange corn on the cob on a platter with bread cubes, gingerbread men, candy canes, wafers, and strawberries for a festive presentation.
