Special gingerbread cake with honeycomb treacle butter.
Ingredients:
  • 100g unsalted butter
  • 100g treacle, plus extra to drizzle
  • 100g golden syrup
  • 100g brown sugar
  • 300g self-raising flour
  • 15.00 gm ground ginger
  • 2.50 gm mixed spice
  • 2 eggs
  • 125ml (1/2 cup) buttermilk
  • Treacle, to serve
  • 250g unsalted butter, softened
  • 40ml (2 tbsp) treacle
  • 100g honeycomb*, lightly crushed
Instructions:
  • Preheat the oven to 170°C and generously grease a 26 x 7cm loaf pan.
  • Combine the butter, treacle, golden syrup, and sugar in a saucepan over medium heat, stirring until the butter dissolves. Allow the mixture to cool.
  • Combine the flour and spices by sifting them into a large mixing bowl. In another bowl, whisk the eggs and buttermilk together.
  • Gently incorporate the cooled syrup into the spiced flour, then mix in the egg mixture. Stir until well combined, transfer the mixture into a loaf pan, and bake for 30 minutes (insert a skewer into the center to check for doneness).
  • Combine butter, treacle, and honeycomb in a food processor until smooth. Serve with warm gingerbread, topped with a drizzle of treacle.
