Line muffin tin with vanilla wafer crust, fill with lemon cheesecake batter, bake, and top with fruit pie filling.
Ingredients:
  • 12 vanilla wafers
  • 2 (8 ounce) packages cream cheese, softened
  • 2 tablespoons lemon juice
  • 0.66666668653488 cup white sugar
  • 1 (21 ounce) can cherry pie filling, or flavor of choice
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect baking temperature.
  • Place a vanilla wafer in each of the 12 paper baking cups lined in the muffin tins.
  • In a medium mixing bowl, whip the cream cheese until fluffy. Mix in the eggs, lemon juice, and sugar until smooth and well combined.
  • Spoon the creamy cheese mixture into each baking cup, filling it 2/3 full.
  • Bake in a warm oven for 15-17 minutes, then cool on a rack before adding a dollop of fruit pie filling on top.
