Ingredients:
1 (2 to 3 pound) whole chicken
2stalkslemon grass
12clovesgarlic
2tablespoons salt
5tablespoons peeled and choppedfresh turmeric
1teaspoonwhole white peppercorns
Instructions:
Prepare the lemongrass by removing roots and tops. Use a mortar and pestle to create a smooth paste with lemongrass, salt, garlic, turmeric, and pepper.
Cut the chicken in half lengthwise, rinse thoroughly, and coat with a flavorful spice paste. Let it marinate in the refrigerator for 4 hours or overnight.
Grill over medium heat until fully cooked and caramelized. Serve immediately.
