Luscious lemon-cream cheese cookies drizzled with zesty glaze, perfect for dessert or paired with coffee or tea.
Ingredients:
  • 1.5 cups cake flour
  • 1 tablespoon baking powder
  • 0.75 cup butter
  • 0.5 (8 ounce) package cream cheese
  • 0.5 cup white sugar
  • 0.5 cup powdered sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1 ounce cream cheese, softened
  • 5 tablespoons milk
  • 1 cup sifted powdered sugar
Instructions:
  • Preheat the oven to 350°F (175°C) while preparing a lined cookie sheet with parchment paper.
  • Combine the cake flour, all-purpose flour, baking powder, and salt by sifting them together in a medium bowl.
  • In the bowl of a stand mixer fitted with the paddle attachment, blend butter, cream cheese, white sugar, and powdered sugar until light and fluffy, about 4 to 5 minutes. Incorporate the egg and egg yolk. Stir in lemon juice, lemon zest, and vanilla extract. Gently mix in the flour mixture until just combined; the batter will be thick and sticky. Use a small cookie scoop to place dough 1 inch apart on the baking sheet.
  • Bake until edges are golden, about 11 minutes in preheated oven. Cool on baking sheet for 1 minute, then transfer to wire rack to cool. Repeat with remaining dough.
  • As cookies bake, combine cream cheese, milk, lemon juice, and lemon zest in a small bowl. Whisk until smooth. Gradually whisk in powdered sugar until glaze is smooth and runny. Dip warm cookies in glaze, shake off excess, then place on a cooling rack. Repeat with remaining cookies.
