Delicious baked pumpkin cake donuts, lightly glazed or coated in cinnamon-sugar for the perfect fall treat!
Ingredients:
  • 0.5 cup packed brown sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons pumpkin pie spice
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking soda
  • 1 cup pumpkin puree
  • 2 eggs
  • 0.25 cup milk
  • 0.25 cup butter, softened
  • 1.5 cups confectioners' sugar
  • 0.25 cup butter, melted
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and line a baking sheet with parchment paper.
  • In a bowl, mix all-purpose flour, brown sugar, baking powder, pumpkin pie spice, salt, and baking soda. Add pumpkin puree, eggs, milk, and softened butter. Using an electric hand mixer on low speed, beat until a smooth batter forms. Spoon the batter into a donut pan.
  • Bake the donuts in a preheated oven until they spring back when touched, about 8 to 10 minutes.
  • Combine confectioners' sugar, melted butter, water, and vanilla extract in a bowl, whisk until smooth. Dip warm donuts in the glaze, let excess drip off, then place on baking sheet to cool.
