Glazed roast pumpkin and carrots

"Caramelize veggies for a kid-friendly twist!"
Ingredients:
  • 1.5kg kent pumpkin, peeled, deseeded, cut into 5cm pieces
  • 12 carrots, peeled, cut in half diagonally
  • 60ml (1/4 cup) honey
  • 23.40 gm wholegrain mustard
  • 9.20 gm olive oil
  • Salt & freshly ground black pepper
Instructions:
  • 1. Preheat the oven to 200°C and line 2 baking trays with non-stick baking paper. 2. Mix pumpkin, carrot, honey, mustard, and oil in a bowl. Season with salt and pepper. 3. Spread the mixture in a single layer on the prepared trays. 4. Roast in the oven for 1 hour, turning occasionally, until golden brown and tender. 5. Serve immediately on a platter.
