Gingerbread-inspired pancakes with cinnamon, molasses, and ginger flavors for a cozy autumn brunch treat.
Ingredients:
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon pumpkin pie spice
  • 3 cups milk
  • 0.5 cup molasses
  • 0.5 cup coconut oil, melted
  • 2 teaspoons vanilla extract
  • 1 teaspoon vegetable oil
Instructions:
  • Combine the flour, baking powder, ginger, cinnamon, salt, baking soda, and pumpkin pie spice in a bowl, blending the flavors together seamlessly.
  • In a separate bowl, vigorously whisk the eggs until they are perfectly smooth. Add in the milk, molasses, coconut oil, and vanilla extract. Gradually fold in the flour mixture into the milk mixture until a cohesive batter forms, it's okay to have a few lumps.
  • Lightly coat the griddle with oil and preheat over medium-low heat.
  • Spoon batter onto the griddle and cook until bubbles form and edges are dry, around 4 minutes. Flip and cook until browned, about 3 minutes. Repeat with the rest of the batter.
