Gingerbread-inspired pancakes with cinnamon, molasses, and ginger flavors for a cozy autumn brunch treat.
Ingredients:
3cups all-purpose flour
2teaspoons baking powder
2teaspoons ground ginger
2teaspoons ground cinnamon
1teaspoonsalt
0.5 teaspoonbaking soda
0.5 teaspoonpumpkin pie spice
3cups milk
0.5 cupmolasses
0.5 cupcoconut oil, melted
2teaspoons vanilla extract
1teaspoonvegetable oil
Instructions:
Combine the flour, baking powder, ginger, cinnamon, salt, baking soda, and pumpkin pie spice in a bowl, blending the flavors together seamlessly.
In a separate bowl, vigorously whisk the eggs until they are perfectly smooth. Add in the milk, molasses, coconut oil, and vanilla extract. Gradually fold in the flour mixture into the milk mixture until a cohesive batter forms, it's okay to have a few lumps.
Lightly coat the griddle with oil and preheat over medium-low heat.
Spoon batter onto the griddle and cook until bubbles form and edges are dry, around 4 minutes. Flip and cook until browned, about 3 minutes. Repeat with the rest of the batter.
