Zesty lemon thyme enhances these crispy gluten-free schnitzels.
Ingredients:
  • 250.00 ml slivered almonds
  • 82.50 ml parmesan, finely grated
  • 20.00 ml fresh lemon thyme, roughly chopped
  • 1 egg
  • 32.50 gm rice flour
  • 550g chicken schnitzel
  • Vegetable oil, for shallow-frying
Instructions:
  • 1. In a food processor, pulse almonds until finely chopped. Reserve half of the almonds on a plate. 2. Continue processing the remaining almonds until they form a fine meal. 3. Combine the almond meal, Parmesan, and thyme with the reserved chopped almonds. 4. Season the mixture generously with salt and pepper, then stir until well combined.
  • In a bowl, whisk the egg. Spread rice flour on a plate. Coat schnitzels in flour one by one, shaking off excess. Dip in egg, then coat in almond mixture. Transfer to a plate, cover, and refrigerate for 30 minutes.
  • Pour a generous amount of oil into a deep frying pan until it reaches 5mm up the side of the pan. Heat over medium-high heat. Fry schnitzels in 2 batches for about 5 minutes on each side until they are golden brown and fully cooked. Drain on paper towel, cover to retain warmth, and serve.
