Make light and fluffy gluten-free buttermilk biscuits at home using this simple recipe with gluten-free flour.
Ingredients:
  • 2.25 cups gluten-free all purpose baking flour
  • 2 tablespoons golden flaxseed meal
  • 1 tablespoon baking powder
  • 1.5 teaspoons salt
  • 6 tablespoons cold butter, cut into tablespoon-sized pieces
  • 1 cup buttermilk
  • 3 tablespoons ricotta cheese
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C), then generously grease a 12-cup muffin tin.
  • In a medium bowl, combine flour, flaxseed meal, sugar, baking powder, and salt. Add butter and use 2 knives or a pastry blender to mix until slightly crumbly.
  • Combine buttermilk and ricotta cheese in a separate bowl, add egg, and pour gradually into the flour mixture to form a wet dough. Use floured hands to shape the dough into twelve 1 1/2-inch thick discs and place each one in a muffin cup.
  • Place in the preheated oven and bake until the top is golden brown, for about 15 to 20 minutes. Allow the biscuits to cool in the pan for at least 5 minutes to avoid any gumminess; they will improve in texture as they cool.
