Decadent gluten-free brownies, rich in chocolate and nuts. Perfect for sharing or indulging solo.
Ingredients:
  • 100g pecans, coarsely chopped
  • 150g dairy-free margarine
  • 150g 70 per cent cocoa dark chocolate, coarsely chopped
  • 35g (1/3 cup) cocoa powder
  • 80ml (1/3 cup) hot water
  • 150g good-quality white chocolate, coarsely chopped
  • 270g (1 1/3 cups, firmly packed) brown sugar
  • 40g (1/3 cup) almond meal
  • 60g (1/3 cup) rice flour
  • 50g (1/3 cup) gluten-free plain flour
  • Pure icing sugar, to dust
Instructions:
  • Preheat the oven to 180°C. Line a square 23cm cake pan with non-stick baking paper, leaving some hanging over the edges. Toast the pecans on a baking tray in the oven for 5 minutes until fragrant, then let them cool.
  • In a heatproof bowl set over simmering water, combine margarine, dark chocolate, cocoa, and water, making sure the bowl doesn't touch the water. Stir with a metal spoon for 8 minutes until the chocolate melts and the mixture is smooth. Remove from heat.
  • Combine the pecans, white chocolate, sugar, almond meal, and mixed flours, stirring until fully incorporated.
  • - Beat the eggs with an electric beater in a bowl for 5 minutes until thick and pale. - Gently fold half of the beaten eggs into the chocolate mixture using a metal spoon until just combined. Repeat with the remaining eggs. - Pour the chocolate mixture into the prepared pan and bake in the oven for 25 minutes or until a skewer inserted into the center comes out clean. - Let it cool, then dust with icing sugar and cut into pieces to serve.
