Try this quick and irresistible Chocolate-Marshmallow Pillows recipe using Betty Crocker™ Gluten Free chocolate chip cookie mix for a delightful dessert.
Ingredients:
  • 1/2 cup butter, softened
  • 1 box (19 oz) Betty Crocker™ Gluten Free Chocolate Chip Cookie Mix
  • 2/3 cup chopped pecans
  • 15 large gluten-free marshmallows, cut in half
  • 1 cup semisweet chocolate chips (6 oz)
  • 1/3 cup whipping cream
  • 1 teaspoon butter
  • 1 teaspoon pure vanilla extract
  • 1/2 cup powdered sugar
Instructions:
  • Preheat the oven to 350°F. In a medium bowl, mix 1/2 cup of butter with the egg until well combined. Add the cookie mix and stir until a soft dough forms, then mix in the pecans. Place rounded tablespoonfuls of dough on ungreased cookie sheets, about 3 inches apart.
  • After baking for 8 minutes, gently press a marshmallow half, cut side down, onto each cookie right after taking them out of the oven. Put them back in the oven for 1 to 2 minutes until the marshmallows start to soften. Let them cool for 2 minutes on the cookie sheets before transferring to cooling racks. Allow them to cool completely for about 15 minutes.
  • In a medium microwavable bowl, microwave the chocolate chips on High for about 1 minute, stirring until smooth. Blend in whipping cream, 1 teaspoon of butter, and vanilla until well combined. Stir in powdered sugar until smooth.
  • Spread a velvety layer of frosting over each cookie, ensuring the marshmallow is completely coated. Allow the frosting to rest until it is firm and set.
