Indulge in gluten-free chocolate whoopie pies for a fun and delicious treat!
Ingredients:
  • 125g butter, softened
  • 2.20 gm vanilla essence
  • 215.00 gm caster sugar
  • 2 eggs
  • 375.00 ml gluten-free plain flour
  • 65.00 gm cocoa powder
  • 2.00 gm gluten-free baking powder
  • 3.75 gm bicarbonate of soda
  • 130.00 gm buttermilk
  • 125g unsalted butter, softened
  • 225.00 gm pure icing sugar, sifted
  • 20.00 gm cocoa powder, sifted
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced and line 3 large baking trays with baking paper.
  • With an electric mixer, whip up a delightful blend of butter, vanilla, and sugar until it becomes wonderfully fluffy. Gradually add the eggs one at a time, making sure to mix thoroughly after each addition (don't worry if it looks lumpy). In a separate large bowl, sift together the flour, cocoa, baking powder, and baking soda.
  • Gradually add flour mixture to butter mixture, stirring until combined. Mix in half of the buttermilk. Repeat with remaining flour mixture and buttermilk until just combined.
  • Transfer the batter into a large piping bag equipped with a 1cm plain nozzle. Pipe 32 rounds that are 3cm wide onto the trays with 5cm space in between each round. Let the rounds rest for 15 minutes. Bake for 8 to 10 minutes until the tops are firm. Allow them to cool on the trays.
  • Prepare Filling: With an electric mixer, whip butter in a bowl until creamy. Slowly add icing sugar and cocoa, continuing to mix. Transfer the mixture into a piping bag with a 2cm fluted nozzle. Pipe the filling onto 16 rounds and delicately sandwich with the remaining rounds. Keep refrigerated in an airtight container.
