Irresistible gluten-free coconut cake with walnuts, enriched with flaked coconut and coconut milk.
Ingredients:
  • 2 cups gluten-free flour
  • 1.5 cups white sugar
  • 1 cup flaked coconut
  • 1 teaspoon xanthan gum
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C), then generously grease and flour a 9x13-inch baking dish.
  • Combine flour, sugar, coconut, walnuts, baking powder, baking soda, xanthan gum, and salt in a bowl. Mix in coconut milk, vegetable oil, eggs, and vanilla extract until smooth. Spread batter in the baking dish.
  • Bake in the preheated oven for about 45 minutes, or until a toothpick inserted in the center comes out clean.
