Delicious gluten-free stuffing with cranberries and bacon, perfect for any occasion.
Ingredients:
  • 2 2/3 cup Bisquick™ Gluten Free mix
  • 2 1/2 cups milk
  • 6 tablespoons vegetable oil
  • 2 eggs
  • 5 slices gluten-free bacon, cut into 1/2-inch pieces
  • 5 tablespoons butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried rubbed sage
  • 2 cups Progresso™ chicken broth (from 32-oz carton)
  • 1 cup dried cranberries
Instructions:
  • Preheat the waffle iron. Combine the baking mix, milk, oil, and eggs in a large bowl. Cook the batter in the waffle iron following the manufacturer's instructions. Once done, transfer the waffles to a baking sheet to cool. Cut the cooled waffles into 1-inch cubes and spread them on a baking sheet. Cover with a paper towel and leave the waffle cubes to dry overnight.
  • In a 10-inch skillet, melt butter and cook bacon until crispy. Set bacon aside. Add onion, celery, salt, pepper, and sage to the skillet, cooking and stirring until the onion is tender.
  • Preheat oven to 425°F and generously coat a 13x9-inch baking dish with nonstick spray.
  • Combine waffle cubes, bacon, onions, and cranberries in a large bowl. Pour in broth and mix until everything is moist. Transfer mixture to a baking dish, cover with foil, and bake for 30 minutes. Uncover, add more broth if needed, and bake for an additional 20-25 minutes until crispy on top.
