Gluten-Free German Chocolate Cake Chex™ Muddy Buddies™

Delicious snack mix inspired by German chocolate cake with cake and frosting flavors.
Ingredients:
  • 20 gluten-free caramels, unwrapped
  • 2 tablespoons whipping cream
  • 4 cups Honey Nut Chex™ or Rice Chex™ cereal
  • 1/2 cup sweetened flaked coconut
  • 3/4 cup pecan halves, coarsely chopped
  • 4 cups Chocolate Chex™ cereal or Rice Chex™ cereal
  • 1/4 cup butter
  • 4 oz sweet baking chocolate or semisweet baking chocolate, chopped
  • 1/2 cup powdered sugar
  • 1/4 cup unsweetened baking cocoa
Instructions:
  • Preheat your oven to 300°F and cover a 15x10x1-inch pan with cooking parchment paper.
  • In a large microwave-safe bowl, melt caramels, 2 tablespoons of butter, and cream on High for 2 to 3 minutes, stirring every minute until smooth. Add Honey Nut Chex cereal, coconut, and pecan halves; mix until well coated. Transfer the mixture to a pan and bake for 15 minutes. Allow to cool entirely for about 30 minutes before serving.
  • Place Chocolate Chex cereal in a large microwavable bowl. In a small microwavable bowl, melt 1/4 cup butter uncovered on High for about 30 seconds. Add chopped chocolate, then microwave uncovered on High for 30 seconds. Stir well and continue microwaving and stirring in 30-second increments until the mixture is smooth, about 1 minute in total. Pour the chocolate mixture over the cereal and toss until evenly coated.
  • Combine powdered sugar and cocoa in a large resealable bag. Add the chocolate-coated cereal mixture and shake until evenly coated. Serve the chocolate and caramel Chex Mixes layered in a clear glass bowl, and store covered.
