Tropical chicken salad with piña colada yogurt dressing and jerk seasoning.
Ingredients:
  • 1 (6-oz.) container Yoplait® Original yogurt piña colada
  • 1 1/2 to 2 tablespoons lime juice
  • 1 teaspoon Caribbean jerk seasoning (dry)
  • 3 cups shredded romaine lettuce
  • 2 cups cubed cooked chicken
  • 1 cup shredded Monterey Jack cheese (4 oz)
  • 1 can (15 oz) black beans, drained, rinsed
  • 1 1/2 cups diced peeled ripe fresh mango
  • 1/2 cup chopped seeded plum (Roma) tomatoes (1 to 2 medium)
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/2 cup thinly sliced green onions (8 medium)
  • 1/2 cup cashews
Instructions:
  • Blend the ingredients for the dressing in a small bowl until smooth and fully combined.
  • In a 3- or 4-quart clear glass serving bowl, arrange salad ingredients in the order listed, excluding cashews. Drizzle dressing over the salad evenly, then sprinkle cashews on top.
