Delicious gluten-free lemon friands topped with coconut.
Ingredients:
  • 5 egg whites, lightly beaten
  • 150.00 gm almond meal
  • 225.00 gm gluten-free pure icing sugar, sifted
  • 165.00 ml gluten-free plain flour
  • 150g butter, melted, cooled
  • 3 tsp finely grated lemon rind
  • 2 egg whites, lightly beaten
  • 99.00 gm gluten-free pure icing sugar, sifted
  • 56.10 gm desiccated coconut
Instructions:
  • 1. Preheat your oven to 190C (170C fan-forced) and generously grease and flour three 12-hole, 1 1/2 tablespoon-capacity mini muffin pans. 2. In a bowl, mix together egg white, almond meal, icing sugar, flour, butter, and lemon rind until well combined. 3. Distribute the mixture evenly among the prepared muffin pans.
  • Prepare the macaroon topping by mixing egg white, icing sugar, and coconut in a bowl. Spoon 1 teaspoon of the mixture onto each friand, spreading gently to cover the top slightly. Expect the topping to sink slightly as it bakes.
  • Bake until golden and firm to the touch for about 15 minutes. Let it sit in the pans for 2 minutes, then transfer to a wire rack to cool. Serve and enjoy.
