"Gluten-free schnitzels get a tasty crunch from quinoa flakes."
Ingredients:
  • 250.00 ml quinoa flakes
  • 1 tsp garlic powder
  • 62.50 ml parmesan, finely grated
  • 2 tsp lemon rind, finely grated
  • 40.00 ml fresh chives, finely chopped
  • 40.00 ml fresh basil leaves, finely chopped
  • 32.50 gm rice flour
  • 550g chicken schnitzel
  • Vegetable oil, for shallow-frying
Instructions:
  • Mix together quinoa flakes, garlic powder, parmesan, lemon zest, chives, and basil on a plate. Season generously with salt and pepper.
  • In a shallow bowl, beat eggs. Spread rice flour on a plate. Coat schnitzels with flour, then dip in eggs and coat with quinoa. Transfer to a plate, cover, and chill in the refrigerator for 30 minutes.
  • In a large deep frying pan, pour enough oil to reach 5mm up the side of the pan. Heat over medium-high heat. Cook schnitzels in two batches for 5 minutes on each side until golden and cooked through. Drain on paper towel, cover to keep warm, and serve.
