Whip up a vibrant meal in 30 minutes with chicken, broccoli, and rice. Perfect for busy cooks!
Ingredients:
  • 1 tablespoon butter
  • 4 boneless skinless chicken breasts (about 1 lb)
  • Water called for on brown rice package for 1 cup uncooked rice
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup uncooked quick-cooking brown rice
  • 3 cups frozen broccoli florets, thawed
  • 1/2 cup shredded Cheddar or gluten-free American cheese (2 oz)
Instructions:
  • In a 10-inch nonstick skillet over medium-high heat, melt butter until sizzling. Add chicken and sear for 1 to 2 minutes on each side until golden brown.
  • Take out the chicken pieces from the skillet. Mix in water, mustard, salt, and pepper into the skillet, stirring with a wire whisk until well combined. Bring it to a boil and add the rice, let it boil again. Arrange the chicken pieces and broccoli over the rice. Lower the heat, cover, and simmer for about 10 minutes until most of the liquid is absorbed and the chicken's center reaches 170°F.
  • Top with a generous layer of cheese and allow to rest, covered, for 5 minutes.
