Delicious gluten-free sweet potato and thyme wraps.
Ingredients:
  • 150g orange sweet potato, peeled, grated
  • 625.00 ml gluten-free white bread mix
  • 2.40 gm salt
  • 20.00 ml roughly chopped fresh thyme leaves
  • 18.20 gm extra virgin olive oil
Instructions:
  • In a microwave-safe bowl, place the sweet potato and cover it with plastic wrap. Microwave on HIGH for 3 to 4 minutes until just tender. Remove the plastic wrap and let it cool for 10 minutes.
  • In a large bowl, mix together the bread mix, salt, thyme leaves, and cooled sweet potato. Season with pepper and pour in 1 2/3 cups water. Whisk until smooth and well combined.
  • 1. Preheat a large frying pan over medium heat. Lightly brush the pan with oil. Pour 1/3 cup of batter into the pan and spread it into a 20cm round using a palette knife. Cook for 2 minutes until golden brown. Flip the round over and cook for another minute until fully cooked. Place in a clean tea towel to cool. Repeat the process to make a total of 8 wraps.
