Gluten-Free Tex Mex Mac and Cheese

Indulge in our gluten-free Tex-Mex mac n' cheese featuring Progresso® Traditional chicken cheese enchilada soup, Cheddar, and pepper Jack.
Ingredients:
  • 3 cups uncooked gluten-free brown rice penne
  • 1 can (18 oz) Progresso™ Traditional chicken cheese enchilada flavor soup
  • 1/2 cup milk
  • 1 1/2 cups gluten-free shredded sharp Cheddar cheese (6 oz)
  • 1 cup gluten-free shredded pepper Jack cheese (4 oz)
Instructions:
  • Preheat oven to 400°F and lightly grease a 2-quart casserole dish with cooking spray. Prepare pasta according to package instructions, then drain.
  • In a 3-quart saucepan, bring soup and milk to a boil. Take off heat and blend in cheeses until melted. Add pasta and transfer to a casserole dish.
  • Bake for 20 minutes until edges are bubbly. Store any leftovers in the refrigerator.
