Succulent garlic butter shrimp served with pillowy gnocchi and fragrant pesto for a delightful meal for two.
Ingredients:
  • 1 bunch fresh sweet basil, stemmed
  • 5 tablespoons grated Parmesan cheese, divided
  • 4 tablespoons pine nuts
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 0.5 tablespoon salt
  • 0.5 tablespoon ground black pepper
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 0.25 pound raw shrimp
  • 1 (12 ounce) package potato gnocchi
Instructions:
  • In a blender, blend together basil, 4 tablespoons of Parmesan cheese, pine nuts, olive oil, whole garlic cloves, salt, and pepper until a smooth pesto is formed.
  • 1. In a frying pan over medium heat, melt butter until sizzling. Toss in minced garlic, sizzle for 30 seconds to 1 minute until aromatic. Add shrimp and cook until opaque, stirring occasionally, for 2 to 3 minutes. Set aside and keep cozy.
  • 1. Boil a large pot of lightly salted water. Cook gnocchi until they float to the top, about 2 to 4 minutes. Drain and toss with pesto. Serve with shrimp and sprinkle with extra Parmesan cheese on top.
