Goat's cheese, beetroot and walnut tartlets

Begin your meal with delightful goat cheese and beetroot tarts.
Ingredients:
  • 150g soft goat's cheese
  • 40.00 ml fresh chives, finely chopped
  • 1 tsp fresh thyme leaves, finely chopped
  • 1/2 x 450g can whole baby beetroot, drained
  • 2 x 192g packets mini tart shells (see Notes)
  • 28.75 gm walnuts, toasted, roughly chopped
Instructions:
  • Preheat the oven to 180C/160C fan-forced, then mix goat’s cheese, chives, and thyme in a small bowl. Season with salt and pepper, and stir well to combine.
  • Lay beetroot on paper towel to absorb moisture. Gently press with paper towel to dry. Finely chop.
  • Arrange the tart cases on a baking tray, generously fill each one with the delightful goat's cheese mixture, and bake for a quick 5 minutes until they are perfectly warmed through. Finally, garnish with beetroot and walnuts before serving.
