Prosciutto, pear, and goat cheese salad - an exquisite, harmonious blend of flavors.
Ingredients:
  • 1 x 150g log goat's cheese (South Cape brand), sliced
  • 1 garlic clove, crushed
  • 2 tsp finely chopped fresh oregano
  • 2 tsp finely chopped fresh thyme
  • 1 tsp finely grated lemon rind
  • 125ml (1/2 cup) olive oil
  • 12 slices prosciutto
  • 3 ripe pears, cored, thinly sliced lengthways
  • 55g (1/2 cup) walnut halves, coarsely chopped
  • 40.00 ml red wine vinegar
  • 17.70 gm Dijon mustard
  • Salt & freshly ground black pepper
  • 60g watercress sprigs, washed, dried
Instructions:
  • In a shallow glass dish, lay out the goat's cheese. Mix garlic, oregano, thyme, lemon rind, and half of the oil in a jug. Drizzle the cheese evenly with the oil mixture. Cover with plastic wrap and refrigerate for 1 hour to enhance the flavors.
  • Preheat a large non-stick pan over medium-high heat. Cook half of the prosciutto for 1 minute on each side until crispy. Transfer to a paper towel-lined plate. Repeat with the rest of the prosciutto. Roughly chop the prosciutto.
  • In the same pan, heat up the remaining oil over medium heat and add half of the pear slices. Cook for 3 minutes on each side until they turn golden brown. Place them on a plate lined with paper towel. Repeat with the remaining pear slices. Next, put the walnuts in the pan and stir for about 3 minutes until they are toasted. Then, remove from heat.
  • In a jug, combine the vinegar, mustard, and remaining oil. Season with salt and pepper to taste.
  • In a large bowl, mix watercress, pear, and prosciutto. Then, drizzle with dressing and toss gently to combine all the flavors.
  • Plate the salad elegantly. Add creamy goat's cheese generously and drizzle with a flavorful marinade. Finish with a sprinkle of crunchy walnuts and serve promptly.
