Effortlessly create a delicious pasta dish for busy nights.
Ingredients:
  • 400g angel hair pasta
  • 36.40 gm olive oil
  • 2 cloves garlic, chopped
  • 1 long red chilli, seeded and finely sliced
  • 125g baby spinach leaves
  • 62.50 ml shredded basil
  • salt and cracked black pepper
  • 100g goat's cheese, crumbled into large pieces
Instructions:
  • Prepare the pasta in a large saucepan of salted boiling water following the instructions on the packet. Once cooked, drain the pasta, cover it, and keep it warm.
  • In a large non-stick pan over medium heat, sauté garlic and chili in oil for 1 minute. Add spinach and cook for 2-3 minutes until just starting to wilt.
  • Toss the pasta gently until well coated in the chili and garlic mixture. Simmer on low for 2 minutes, then gently incorporate the basil.
  • Divide the pasta among bowls and sprinkle with crumbled goat's cheese. Enjoy with a side of salad or bread.
