Seasonal asparagus and creamy goat cheese combine in a delectable tart.
Ingredients:
  • 350g fresh ricotta
  • 120g goat's cheese
  • 62.50 ml fresh basil, chopped
  • 20.00 ml lemon rind, grated
  • 2 bunches asparagus, trimmed
  • 2 sheets frozen puff pastry, just thawed
  • 2 bunches asparagus, extra, shaved
  • 100g Perino tomatoes, quartered
  • 21.00 gm lemon juice
  • 18.20 gm extra virgin olive oil
  • Lemon rind, extra, to serve
  • Extra virgin olive oil, to serve
Instructions:
  • Preheat your oven to 220C and prepare 2 baking trays with parchment paper.
  • In a bowl, mix together ricotta, goat's cheese, basil, and lemon rind. Season to taste. Place pastry sheets on lined trays. Score a 1cm border around each pastry sheet, without cutting all the way through. Spread the cheese mixture over the pastry squares, then add the asparagus on top. Spray lightly with oil. Bake for 15 mins until puffed and golden.
  • Combine the additional asparagus, tomato, fresh lemon juice, and oil in a bowl. Season to taste.
  • Serve the tarts with a flavorful tomato mixture and additional cheese rind. Finish by drizzling with a touch of extra oil.
