Savor the flavors of the season with a tasty asparagus and goat cheese tart.
Ingredients:
  • 350g fresh ricotta
  • 120g goat's cheese
  • 62.50 ml fresh basil, chopped
  • 20.00 ml lemon rind, grated
  • 2 bunches asparagus, trimmed
  • 2 sheets frozen puff pastry, just thawed
  • Olive oil spray
  • 2 bunches asparagus, extra, shaved
  • 100g Perino tomatoes, quartered
  • Lemon rind, extra, to serve
  • Extra virgin olive oil, to serve
Instructions:
  • Preheat the oven to 220C and prepare 2 baking trays by lining them with baking paper.
  • In a bowl, mix ricotta, goat's cheese, basil, and lemon zest. Add seasoning. Lay pastry sheets on lined trays. Using a knife, lightly score a 1cm border around each pastry sheet without cutting through. Spoon cheese mixture onto pastry squares. Add asparagus on top. Spray with oil. Bake until puffed and golden, approximately 15 minutes.
  • In a bowl, toss together more asparagus, tomato, lemon juice, and oil. Season with salt and pepper to taste.
  • Top tarts with tomato mixture and additional rind, then drizzle with extra oil before serving.
