Ingredients:
  • 6-8 slices baguette (sliced on the diagonal)
  • 1 garlic clove
  • 300g soft goat's cheese
  • 1 small lemon, zested, juiced
  • 1 tsp chopped fresh rosemary leaves
  • 125g good-quality cherry jam
  • Mixed leaf salad, to serve
Instructions:
  • Toast or grill the baguette slices until golden brown. Then, rub the warm bread with the cut side of the halved garlic clove for extra flavor.
  • Combine goat's cheese with tangy lemon zest and juice, fragrant rosemary, and a dash of salt and pepper in a bowl. Spread this flavorful mixture over the baguette slices.
  • Microwave the jam for 30 seconds on high until warm, then spoon over the goat's cheese toasts. Accompany with a mixed leaf salad.
