Goat's cheese and cranberry sauce on bruschetta

Ingredients:
  • 4 large slices of wood-fired Italian bread
  • 93.60 gm good-quality cranberry sauce
  • 4 slices (about 1cm thick) rinded goat's cheese
  • 80ml (1/3 cup) olive oil
  • 500.00 ml wild rocket leaves
  • 30.00 ml balsamic vinegar
Instructions:
  • Preheat your oven to 190°C.
  • Place the bread on the grill or chargrill to toast on one side. Then, lay the bread on a large baking tray with the toasted side facing down. Spread cranberry sauce on the bread and top with a slice of goat's cheese.
  • Drizzle 2 tablespoons of oil over the bread and bake for 10 minutes until the cheese is bubbling at the edges. Toss the arugula in the leftover oil and balsamic vinegar, then pile onto each bread slice. Season with salt and pepper to taste.
