Indulgent goat cheese and cranberry pancakes - a heavenly brunch or light lunch option.
Ingredients:
  • 75g plain flour
  • 60ml milk
  • 2 eggs
  • 20-40g unsalted butter, melted
  • 125g soft goat's cheese
  • 80g cranberry sauce
  • 40.00 ml finely snipped chives
Instructions:
  • Blend together flour, milk, egg, 1/4 cup (60ml) water, and 1/2 teaspoon salt until velvety. Pour the mixture into a jug, cover, and let it sit for 1 hour.
  • Heat a large non-stick frypan over medium heat and brush with melted butter. Spoon 1 tablespoon of batter for each small pancake into the pan, allowing room for spreading. Cook for 1 minute, flip, and cook for another 30 seconds until golden. Transfer to a plate, cover with foil to keep warm. Repeat with remaining batter, brushing the pan with more butter as necessary, to yield 12 pancakes.
  • Spread goat's cheese and 1 teaspoon of sauce on each pancake. Sprinkle with chives and pepper, fold over, and serve on a platter.
