Goat's cheese blintzes with cranberry sauce

Indulgent goat cheese and cranberry pancakes - perfect for brunch or a light lunch!
Ingredients:
  • 75g plain flour
  • 60ml milk
  • 20-40g unsalted butter, melted
  • 125g soft goat's cheese
  • 80g cranberry sauce
  • 40.00 ml finely snipped chives
Instructions:
  • Blend flour, milk, egg, 1/4 cup (60ml) water, and 1/2 teaspoon salt until smooth. Then, pour the mixture into a jug, cover, and let it rest for 1 hour.
  • Heat a large non-stick frypan over medium heat and lightly brush with melted butter. Spoon 1 tablespoon of batter for each small pancake into the pan, leaving space for spreading. Cook for 1 minute, flip, and cook for another 30 seconds until golden. Transfer to a plate, cover with foil to keep warm. Repeat with the remaining batter, brushing the pan with butter as necessary to make a total of 12 pancakes.
  • To plate, generously spread goat's cheese on each pancake and add 1 teaspoon of sauce on top. Sprinkle with fresh chives and a pinch of pepper, then fold and arrange beautifully on a serving platter.
