Goat's cheese-stuffed zucchini flowers with radicchio salad

Zucchini flowers: Rare garden delicacy that elevates any dish to gourmet status.
Ingredients:
  • 100g goat's cheese
  • 100g fresh ricotta
  • 1 tsp finely grated lemon rind
  • 62.50 ml finely chopped chives
  • 12 zucchini flowers
  • 75g plain flour
  • 20.00 gm cornflour
  • Pinch of bicarbonate of soda
  • 1 small egg, lightly whisked
  • 185ml soda
  • Vegetable oil, for deep frying
  • Plain flour, to dust
  • 20.00 ml balsamic vinegar
  • 36.40 gm olive oil
  • 1 bunch rocket, trimmed
  • 1 small radicchio, leaves separated
  • 40.00 ml toasted pinenuts
Instructions:
  • Mix the goat's cheese, ricotta, lemon zest, and chives in a small bowl. Season with salt and pepper to taste.
  • Carefully separate the petals of the flowers and take out the stamens. Fill each flower with the goat's cheese mixture and delicately twist to seal the filling inside.
  • In a medium bowl, sift the flour, cornflour, and bicarbonate of soda, then create a well in the center. Add the egg and soda water, gently whisk with a fork until just combined (avoid overmixing; the batter should be lumpy).
  • Heat a generous amount of oil in a large saucepan over high heat until a cubed piece of bread turns golden brown in 10 seconds to check if the oil is ready. Make sure the oil reaches a depth of 6cm.
  • Combine balsamic vinegar and oil in a small bowl. Toss rocket and radicchio in a serving bowl. Drizzle with dressing, toss gently. Sprinkle with pine nuts.
  • Prepare a plate with extra flour and gently coat the zucchini flowers. Then, dip a quarter of the flowers one by one into the batter, ensuring they are lightly coated. Deep-fry until golden and crisp, about 2-3 minutes. Use a slotted spoon to transfer to a paper towel-lined plate. Repeat for the remaining batches of zucchini flowers.
  • Place the zucchini flowers elegantly on a beautiful serving plate. Enjoy promptly alongside a crisp radicchio and rocket salad.
