Vietnamese goi ga salad: Toss shredded chicken with zesty dressing, crisp veggies, and herbs for a refreshing bite!
Ingredients:
  • 4 skinless cooked chicken breasts, shredded
  • 1 small head cabbage, finely shredded
  • 1 bunch fresh cilantro, chopped
  • 1 red onion, thinly sliced
  • 1 small carrot, peeled and cut into matchsticks
  • 0.5 cup white vinegar
  • 4 tablespoons white sugar
  • 2 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 4 cloves garlic, minced
  • 0.5 teaspoon cayenne pepper
  • salt and ground black pepper to taste
  • 0.5 cup chopped roasted peanuts
Instructions:
  • Mix together the chicken, cabbage, cilantro, onion, and carrot in a large bowl and set the salad aside.
  • Combine vinegar, sugar, lime juice, fish sauce, garlic, and cayenne pepper in a separate bowl. Pour the dressing over the salad, toss until well coated, and season with salt and pepper. Chill in the refrigerator for a minimum of 2 hours to enhance flavors.
  • Garnish salad with a sprinkle of chopped peanuts for a delicious crunch.
