Satisfying vegetarian burritos filled with black beans, pinto beans, brown rice, and corn for a quick and delicious meal.
Ingredients:
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 tablespoon minced garlic
  • 1 tablespoon chili powder, divided
  • 2 teaspoons ground black pepper, divided
  • 2 teaspoons cayenne pepper, divided
  • 1 cup canned pinto beans, rinsed and drained
  • 1 cup canned black beans, rinsed and drained
  • 1 cup frozen corn, thawed, drained
  • 1 cup cooked brown rice
  • 6 burrito-size flour tortillas
Instructions:
  • In a large skillet or wok over medium-high heat, sauté onion and garlic with 1 1/2 teaspoons chili powder, 1 teaspoon black pepper, 1 teaspoon cayenne pepper, and cumin until onion softens, about 3-5 minutes.
  • Mix pinto beans, black beans, corn, and rice in a bowl. Slowly add bean mixture to skillet, stirring thoroughly each time. Stir in the rest of the chili powder, black pepper, and cayenne pepper. Lower heat, cover with a lid, and cook for 3 to 5 minutes until heated through and flavors meld seamlessly, stirring occasionally.
  • Spread 1/6 of the bean mixture in a line down the center of 1 tortilla. Fold the sides of the tortilla over the filling, then roll it up into a delicious burrito. Repeat this process with the rest of the bean mixture and tortillas.
