Gramma's Butter Tarts

Classic Canadian butter tarts with sweet raisins nestled in flaky, buttery pastry.
Ingredients:
  • 4 cups all-purpose flour
  • 1 pound lard (such as Tenderflake®)
  • 1 large egg, lightly beaten
  • 11 tablespoons ice cold water
  • 1 tablespoon white vinegar
  • 0.25 cup melted butter
  • 1 cup raisins, rinsed and patted dry
Instructions:
  • For the pastry dough: In a large bowl, whisk together flour and salt. Use a pastry blender to cut lard into the flour mixture until crumbly. Create a well in the center and add 1 beaten egg. Pour in ice-cold water and vinegar, then stir with a wooden spoon until the dough comes together. Divide the dough into 2 balls, wrap each in waxed paper, and chill in the refrigerator for 1 hour.
  • Preheat the oven to 350°F (175°C) for a perfect bake!
  • Prepare the filling by combining brown sugar and melted butter in a large bowl. Use an electric mixer to beat until smooth. Add eggs one at a time, mixing well after each addition. Stir in raisins and vanilla until fully incorporated. Set aside.
  • Roll out a chilled dough ball on a lightly floured surface to 1/8-inch thickness. Use a round biscuit cutter to cut the dough into circles that fit into the bottom and partway up the sides of a muffin tin. Gently press the dough circles into the tin to create tart shells. Fill each shell 3/4 full with raisin filling.
  • Bake until the filling is bubbly and the pastry is lightly browned, around 20 minutes in the preheated oven.
