Cherished family bread with aromatic fennel seeds and sweet raisins pairs perfectly with homemade applesauce for a delightful toast.
Ingredients:
  • 2 (.25 ounce) packages instant yeast
  • 1 cup lukewarm water
  • 1 quart warm water
  • 1 tablespoon salt
  • 1 teaspoon ground ginger
  • 2 tablespoons white sugar
  • 0.5 cup fennel seed
  • 0.33333334326744 cup unsulfured molasses
  • 1 tablespoon melted butter
  • 2 cups rye flour
  • 1.5 cups golden raisins
  • 9 cups bread flour
Instructions:
  • In a small bowl, combine the yeast with 1 cup of warm water. Allow it to sit until it becomes foamy, approximately 10 minutes.
  • Combine warm water, salt, ginger, sugar, fennel, molasses, and melted butter in a large bowl. Add yeast slurry and rye flour, whisking to remove any lumps. Mix in raisins, then gradually add bread flour until a stiff dough forms.
  • Transfer the dough onto a floured surface and incorporate remaining flour until you have a firm, manageable dough. Knead vigorously for 10 minutes to enhance elasticity. Place the dough in a greased bowl, cover, and let it double in size for approximately 1 hour. Once doubled, gently deflate the dough and allow it to rise again until doubled.
  • Take the dough out of the bowl, divide it into 4 equal pieces, remove air bubbles, and shape into loaves. Put the loaves into four well-greased 8x4 inch loaf pans. Allow them to rise in a warm place until doubled in size.
  • Preheat the oven until it's toasty at 350 degrees F (175 degrees C). Bake the loaves for 40 to 45 minutes until they turn a beautiful golden brown hue and sound hollow when tapped underneath.
