Generations-old whole wheat pancakes, sweetened with brown sugar.
Ingredients:
  • 2 cups whole wheat flour
  • 1.5 teaspoons baking powder
  • 0.5 cup brown sugar
  • 1 cup milk, or as needed
  • 0.5 cup applesauce
  • 1 tablespoon vanilla extract
  • 1 teaspoon vegetable oil
Instructions:
  • In a bowl, whisk together whole wheat flour, baking powder, baking soda, and salt. Add in brown sugar, incorporating it into pea-sized pieces. In a separate bowl, beat eggs, then mix in milk, applesauce, and vanilla extract. Create a well in the dry ingredients and pour in the milk mixture; gently stir until just combined. Adjust consistency by adding more milk if needed.
  • Heat a skillet or griddle with vegetable oil over medium-high heat. Pour 2 tablespoons of batter onto the skillet, cook until the bottom is browned and bubbles form on top (2 to 3 minutes), then flip and cook until browned (another 2 to 3 minutes). Repeat with the rest of the batter.
