Quick and easy vintage meatloaf with savory-sweet flavors using ground beef, tomato soup, and instant rice.
Ingredients:
  • 1.5 pounds lean ground beef
  • 2 (10.75 ounce) cans condensed tomato soup, divided
  • 1 cup uncooked instant rice
  • 2 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 0.5 green bell pepper, chopped
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Preheat oven to 350°F (175°C).
  • Combine ground beef, half a can of tomato soup, instant rice, onion, garlic, Italian seasoning, egg, green bell pepper, salt, and black pepper in a bowl. Mix well. Set aside the remaining tomato soup. Shape the mixture into a loaf and transfer it to a 9x13-inch baking dish.
  • Bake the loaf in the preheated oven until golden brown and reaches an internal temperature of 160 degrees F (70 degrees C), approximately 30 minutes. Remove from oven, then top the loaf with the remaining 1 1/2 cans of tomato soup. Return to oven and bake until the soup is heated through and forms a shiny glaze on the meat, around 10 minutes.
