Rhubarb custard pie: Sweet, tangy perfection.
Ingredients:
  • 1 double crust ready-to-use pie crust
  • 3 cups diced rhubarb
  • 2 eggs
  • 1.5 cups white sugar
  • 0.33333331346512 cup light cream
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Spread the rhubarb evenly in one pie crust. Mix eggs, sugar, cream, vanilla extract, and flour until smooth, then pour over the rhubarb. Create a lattice with the remaining pie crust and place it on top of the pie.
  • Preheat oven and bake for 15 minutes, then lower temperature to 350°F (175°C) and bake for an additional 45 minutes. Allow to cool completely before serving.
