Warm German potato salad with cider vinegar and dry mustard dressing, no mayo.
Ingredients:
  • 8 white potatoes, peeled and cut into cubes
  • 1 large onion, chopped
  • 2 teaspoons white sugar
  • 0.5 teaspoon dry mustard
  • 0.25 cup cider vinegar, divided
  • 1 pinch ground black pepper
  • 0.25 cup vegetable oil
Instructions:
  • In a large pot, add potatoes and cover with salted water. Bring to a boil, then simmer on medium-low heat until potatoes are just tender, approximately 15 minutes. Drain the potatoes.
  • In a large bowl, combine potatoes and onion until well mixed.
  • Combine the sugar, mustard, and salt in a bowl. Gradually stir in the vinegar until a smooth paste forms; season with black pepper.
  • In a separate bowl, combine the remaining vinegar and vegetable oil, whisk until smooth, and continuously stream into the bowl with the paste while whisking. Pour the dressing over the potato and onion mixture.
  • Cover the bowl with plastic wrap and allow the salad to cool for 5 to 10 minutes.
